LATE AFTERNOON PICK-ME-UP

So worn out after a day of slashing, digging and shifting things but people coming for dinner. What to do to get over the late afternoon desire for a siesta when there is cooking to be done pronto?

First, pick a few lemony leaves from the garden - lemon verbena or lemongrass are two that I have. Next, slice off a piece of fresh ginger about 1/2cm all round the slice it thinly. Put all this into a cup and pour on boiling water.

Then, make 'easy lemon tart' (recipe will be on Gardeners' Gastronomy in the morning). It is so quick and easy that by the time it is in the oven, the tea will be nicely infused and a good temperature to drink. Before drinking it, however, lick out the bowl of the easy lemon tart - thoroughly - yum. Sometimes I wonder why I cook this tart when I feel like just eating it raw! Now drink the tea while sitting down at the keyboard...ahhhhh... excellent. Lemon and ginger are so good together.

Not quite skippity-doo but at least less like sleepity-doo. Now, back to the cooking...

Hello Kate! I have taken your advice literally. My lemon tart is in the oven as I write and I have just finished my lemon verbena and ginger tea. I've never thought to add the ginger to the tea but it certainly makes a refreshing change. Thanks, Heather

I just have to report back Kate! That lemon tart was a real winner. Utterly delicious! I served it with creamy Greek yoghurt which suited it perfectly. After trying some last night I served it with brunch this morning when a dear friend visited and she also took down the recipe. My toddlers loved it as well. Thanks again.
