Zucchini & Basil Fritters

There seems to be a bit of a blogger’s contest here in Australia to show off our culinary uses of the humble courgette or zucchini.

I reckon the best way to cook zucchinis is to grate them, salt them for 1/2 an hour, squeeze out the juice, add a little besan or other flour, some freshly chopped basil, parsley, chilli and onion, add 3 beaten eggs and fry the fritters in a small amount of oil.

  Here is a picture of our lunch today, usually we serve them with yoghurt to which we add chopped garlic and mint.

What is your favourite way to prepare zucchinis?

Hello Maggie
Those fritters sound simple and good. At the moment I am enjoying zucchini choc-chip biscuits the most but today I am going to make up a slice for the freezer, a zucchini cake and batch of Courgette and goats cheese soup. We had zucchini souffle last Friday and it was good too. Yes, we have a glut.

Yum Tracy! I'd like to add zucchini and mushroom lasagne to the mix.
Then there's zucchinis sliced lengthways and quickly fried in olive oil. Remove from the heat, add crushed garlic, a tiny drizzle of verjuice or Balsamic vinegar and some pepper. Fry some sliced eggplant too. Serve at room temperature.
Stuffed zucchini is excellent too, especially when you discover some big ones hiding under the leaves!

These fritters sound delicious. I was going to add courgette (zucchini) slices fried in olive oil, more or less as Kate suggests. We also brush them with olive oil and grill them on the barbecue with aubergine (eggplant) slices, then sprinkle them with chopped garlic and thyme .... oh, I can't wait for our summer! Chilled courgette soup is good in the heat, too. Chop them and a sweet onion, cover with water and a bit of salt, simmer till soft, liquidise and chill. Serve with crème fraiche or yoghurt and chopped mint.

ooooh C-L I like the sound of that chilled soup, it is going to be hot over the weekend and this would be delicious on a hot night.Simple is good.
